3 very ripe bananas
3/4 cup sugar
Pinch of salt
1 egg
1/4 cup butter
1 teaspoon baking soda
1 tablespoon water
2 cups flour

Mash bananas a fork. Blend in sugar, salt, beaten egg. Melt butter and stir into banana mixture. Dissolve soda in water and add to the flour. Combine all ingredients. Bake in loaf pan for 45 minutes at 350°F.

Add nuts if you desire.


25 - 30 minutes bake time, depending on the thickness of the batter. Makes 2 dozen. Can add nuts and/or raisins.
